The main advantage of having the root filesystem under LVM is that you can easily migrate your root filesystem to a new hard drive once you've added it to the volume group.

Yup, adding extra layers will always make dealing with failures more complex. I find the flexibility outweighs the complexity, though. That said, I personally don't recommend ever running without mirroring, especially on a root filesystem. And, I recommend doing regular backups with something nice like dirvish (http://dirvish.org/).
