You can plug the iPod into the Mac and use the iPod while it's charging. Just make sure to unmount the disk from the desktop. (If the iPod says "Do not disconnect" you're not in the right mode and need to unmount.) Assume it will work on Windows too.

It goes down really fast. You probably want to either plug into the wall with a USB/Pod power doowhatsit or build a 9V->5V battery supply (it's really easy, just google).
