I think it's worth putting emphasis on the fact the hibernate synch always you to develop (from the hibernate site) from the middle out, ie. from the .hbm.xml files to java, and also from the back forward, ie. create the schema -> hbm.xml -> java, same as middlegen. Personally, I prefer the back-> front approach and I've been using the plugin that way for a couple of months now.

I'd be interested in seeing an explanation, documentation and examples of the custom templating functionality myself. I was aware it was there, but since it was largely unexplained (and didn't relate to my investigations at the time) I didn't explore it myself. From what you say, it sounds quite useful and powerful.
