Regardless of how big you define them, sparse disk images only occupy as much room as is used. I just created a 10GB secure image to play with, and after formatting the image occupies 34MB initially. The reason you still have to specify an image size is that the structure of a disk's file system is dependant on the disk's size. Hence the image you make isn't actually "growing", rather the contents of the unused space is not saved on the host drive.

This answer doesn't really solve the problem does it??? I have the same issue/question. Does Apple's file vault sparse image have a size limit too?
