Since I don't have a Linux audience, I can't say Linux. If I need to write something for Windows, I use .NET WinForms. If I need something for OS X, I'd like to do it in Mono. C# is a great language and the .NET framework is well organized with TONS of useful classes.
As much as I love the Mac, the Cocoa frameworks are pretty paltry and disorganized compared to .NET and even Mono. Apple would be REALLY smart to create Cocoa# for writing native Cocoa apps. That would be cool!
